I threw this recipe together on a cold night and it was DELISH! And very easy. I wish I had taken a picture but it got eaten up too quickly!
Ingredients:
1 onion, chopped
About 15 Brussels sprouts,quartered
Two tomatoes, chopped
1 can tomato juice
3 cloves garlic, minced
2 tbs oregano
2 tbs basil
1/4 tsp red pepper flakes
1 bay leaf
lemon juice
2 cups lentils
7 cups water
Begin by sautéing the onion and garlic until fragrant. Add brussels, oregano, basil and red pepper flakes. Stir for 2 minutes. Add lentils, tomato juice and seven cups of water. Add tomatoes. Bring to boil, then reduce to simmer for about 35-40 minutes (check the lentils, they may be done a little sooner). Add lemon juice. Salt and pepper to taste.
Yum! Of course you can add as many other vegetables as you’d like. I simply used what I had in my fridge. Next time I think I’ll throw in some carrots, celery and spinach.
